Sweet Potato and Honey Salmon

What You’ll Need

Serves 2

  • 2 salmon fillets (skin on)

  • 4 tbsp honey

  • 2 tbsp soy sauce

  • Cos lettuce

  • Coleslaw mix (cabbage, carrot)

  • Coleslaw dressing

  • Spring onion, diced

  • Sweet potato

  • Broccolini

  • Salt and pepper

  • Rosemary

  • 3 garlic cloves, diced

  • Extra virgin olive oil

Salmon but make it sweet, nutritious and delish.

Method

  1. Preheat your oven to 180°C fan forced. Then, wash and slice the sweet potato into even circles. Place onto a baking tray, garnish with olive oil and rosemary, salt and pepper. Bake for around 40-45 minutes, or until golden and slightly crispy. Set aside.

  2. Meanwhile, prepare your salmon by marinating the fillets honey and soy sauce, reserving around ¼ of the sauce.

  3. In a pan over low-medium heat, cook the salmon (skin side down first) until crispy. Flip and baste with the remaining marinade until cooked through. Set aside.

  4. Bring a pot of water to the boil and cook the broccolini for 2-3 minutes. Then in the same pan used for the salmon, add the diced garlic and cook until fragrant.

  5. Prepare your salad by combining the coleslaw with dressing and adding extra lettuce for volume.

  6. To serve, plate the salad, followed by the sweet potato crisps, salmon and broccolini. Top with spring onion.
