Greek Nourish Bowls with Tzatziki

What You’ll Need

Serves 2

Salad

  • 250g brown rice

  • 250g (x6) meatballs- recipe up on my page and Substack!!

  • 100g perino tomatoes

  • 1 cucumber

  • 3 tbsp Kalamata olives

  • 1 dill pickle

  • 40g feta, diced

  • Handful of parsley

Tzatziki

  • 1/2 cucumber, grated

  • 1 cup soy Greek yoghurt

  • 1 tbsp lemon juice

  • 1 tbsp extra virgin olive oil

  • 1 tsp minced garlic

  • Salt and pepper

  • Handful of dill

Balanced, fresh and delish.

Method

  1. Prepare your meatballs and set aside.

  2. Cook the brown rice as desired- I used packet brown rice for convenience!!

  3. In a bowl, prepare your Greek inspired salad by dicing the tomatoes, cucumber, feta, pickle and parsley. Add the olives and stir to combine.

  4. In a separate bowl, prepare the tzatziki by combining the grated cucumber, yoghurt, lemon juice, olive oil, garlic, dill, salt and pepper.

  5. Assemble your bowls by serving the rice with the salad and meatballs. Top with the tzatziki and finish with extra parsley, olive oil, salt and pepper to taste.
