Homemade Garlic and Herb Meatballs
What You’ll Need
Serves 2
250g lean beef mince
2 slices of wholegrain bread, crumbed
Handful of fresh parsley, diced
1 tsp minced garlic
Salt and pepper
250g tomato passata
Extra virgin olive oil
1 clove of garlic (if desired)
Spaghetti (use Vetta or pulse pasta for a higher nutrient profile)
There’s something about homemade meatballs that is just so good every time.
Method
To a bowl add your mince, crumb, garlic, olive oil, parsley, salt and pepper to taste.
Roll into even balls and place in a casserole dish with an extra drizzle of olive oil.
Cook for 20 minutes or until brown, at 180 degrees fan forced.
Dice a clove of garlic (if desired).
Once meatballs are out of the oven, pan fry them over low-medium heat until cooked through and golden. Then add your passata and garlic and let simmer.
Prep your parsley, while cooking your spag of choice until al dente. Plate up and you’re done.
