Teriyaki Salmon and Garlic Broccolini with Quinoa

What You’ll Need

  • 125g brown rice and quinoa

  • 2 salmon fillets (skin on)

  • 1 bunch of broccolini

  • 3 garlic cloves

  • Hummus

  • Spring onion, diced

  • Teriyaki sauce

  • Sesame

  • Lemon

  • Extra virgin olive oil

  • Handful of pepitas

Boasting an abundance of healthy omega-3 fats, fibre and plenty of plant and animal protein to keep you feeling satisfied and vibrant.

Method

  1. In a pan over low-medium heat, cook your salmon fillets in olive oil until cooked through. Flip, then add the teriyaki and sesame seeds to coat and flavour. Set aside.

  2. In the same pan, add your diced garlic and allow it to gently cook until fragrant. Meanwhile, microwave the broccolini in water for 2 minutes or until slightly cooked. Add to the pan and cook until slightly charred. Then set aside.

  3. To prepare your dish, spread a dollop of hummus onto your plate, followed by half of the brown rice and quinoa mix. Layer with the salmon, then the broccolini.

  4. Finely slice the spring onion and top with pepitas. Then finish with a wedge of lemon to serve.
