Balanced Breakfast Burrito

Then you'll have to try this burrito. It’s balanced. It's quick to prepare. And best of all, delishhh!
Ingredients (serves one)
Wholegrain wrap
2 eggs (scrambled in EVOO)
1 tbsp pickle dip
1/2 tomato
Red onion
Handful of diced parsley
Lemon
Optional (1/2 avocado)
1 Hash brown
Salt and pepper
Extra virgin olive oil
Method:
To make the salsa, finely dice the tomato, onion and parsley. Add to a bowl and season with lemon juice, salt and pepper. Set aside. Cook the eggs to your liking. While they’re cooking, heat your wrap in the microwave for around 30 seconds to soften. To assemble, start with a layer of dip on the wrap, then add the eggs, salsa, hash brown, and season with salt and pepper. If you have ripe avocado on hand, this makes a beautiful addition and adds extra healthy fats, alongside the olive oil and dip. Roll into a burrito, wrap well, and refrigerate overnight. Simply heat and enjoy the following day! Note to avoid storing cooked egg for longer than one day in the fridge as well (!!!)
