Layered Summer Hummus Dip

What You’ll Need

  • 225g hummus

  • 1 cucumber

  • 250g roma tomatoes

  • Red onion

  • 130g Mediterranean mixed olives

  • Handful of parsley, diced

  • Handful of pomegranates

  • Lemon

  • Salt and pepper

  • Extra virgin olive oil

An absolute crowd pleaser if I do say so. As confirmed by my family over Christmas.


Method

  1. On a dish, plate your hummus topped with your diced cucumber, tomatoes, mixed olives, red onion, parsley, and pomegranates.

  2. Season with lemon, salt, pepper and olive oil to taste. And you’re finished! It’s that simple!
