Layered Summer Hummus Dip
What You’ll Need
225g hummus
1 cucumber
250g roma tomatoes
Red onion
130g Mediterranean mixed olives
Handful of parsley, diced
Handful of pomegranates
Lemon
Salt and pepper
Extra virgin olive oil
An absolute crowd pleaser if I do say so. As confirmed by my family over Christmas.
Method
On a dish, plate your hummus topped with your diced cucumber, tomatoes, mixed olives, red onion, parsley, and pomegranates.
Season with lemon, salt, pepper and olive oil to taste. And you’re finished! It’s that simple!
