Layered Summer Hummus

A gorgeous Summery layered hummus dip, an absolute crowd pleaser if I do say so!

Ingredients

  • 225g hummus

  • 1 cucumber

  • 250g Roma tomatoes

  • Red onion to taste

  • 130g Mediterranean mixed olives

  • Handful of diced parsley

  • Handful of pomegranates

  • Zest of lemon

  • Salt and pepper to taste

  • Extra virgin olive oil

Method:

On a dish, plate your hummus topped with your diced cucumber, tomatoes, mixed olives, red onion, parsley, and pomegranates. Season with lemon, salt, pepper and olive oil to taste.
